WHY EVERY DINNER AT DELPHI IS AN OCCASION

Dinners in the great room at the Delphi Club are quite an event. Each night is special and unique and while dinners carry the distinct homely, intimate feel of the Club, it is of a fine-dining standard and guests dress up accordingly. It’s not a toes-in-the-sand board shorts type of happening - read on to find out why.

The evening usually starts at around 6pm when canapés are served. “My canapés are usually fish options,” says Chef Dale, explaining that the majority of Delphi guests want seafood because of the Club’s proximity to the sea. “You don’t come to the Bahamas to eat red meat,” he jokes.

The canapés usually consist of shrimp, wahoo or tuna … while on some days there are meat options such as a roast beef bruschetta or the like.

It is a social affair with the day’s fishing and other activities excitedly discussed over drinks until around 7pm, while dinner is being prepared.

Dinner is served at 7pm. Everyone then gets seated around the iconic big table that is such a feature of Delphi. Here management couple Jessica and Kyle Reed will head up the proceedings, hosting a pre-dinner announcement, in which they would congratulate notable catches from the day, hand out pins for first-ever catches such as a first bonefish, a fish over eight pounds or a permit! They then also discuss the next day’s plans and also outline guide pairings etc.

It is during this time that Jessica and Kyle will also introduce Dale to the guests. Dale will run the guests through the menu for the evening before heading back to the kitchen to make final prep for service. The menu will always have two mains. “A fish, wahoo, mahi-mahi or tuna; whatever I can get my hands on,” Dale says. “As well as either a red meat, pork, duck or chicken. I rotate between red meat or chicken.”

Dessert is always a beautifully-presented highlight and one of Dale’s specialties.

“Dale comes out periodically to check that everything is going well,” adds Kyle outlining how the entire experience is in line with the homely, yet premium Delphi experience. “It's communal dining, so you share a table with all the guests that are there and the food and service are world class.”

Drinks are on an honesty system, where everything is self-recorded out of a very well-stocked premium bar. The wine list is extensive with fantastic wines from all over the world. As a guest, you pour your own drinks and keep record and it is simply added to your bill.

At Delphi we do take a limited number of outside guests for our dinners. Reservations are essential and taken via email only. Much like for our in-house guests we do advocate dressing for the occasion. To join us for dinner you would also need proof of full vaccination or negative covid test (rapid antigen). We require a minimum of 24-hour’s notice for outside diners.

Dinner is an integral part of what sets Delphi apart and long may the traditions continue.
